What each ingredient does

Eggs
Bind the mixture and add structure as the pudding sets while cooking.
Suet
Adds richness and fat that keeps the pudding moist during long boiling.
All-purpose flour
Provides the starch that gives the pudding its body and firm structure.
Bread crumbs
Soak up liquid and add a light, tender texture to the mixture.
Sugar
Adds sweetness and helps give the pudding its rich, dark flavor.
Brandy
Adds aroma and flavor, and helps keep the pudding moist.

The step that matters

Tying the cloth tightly. A tight, well-floured cloth keeps water out during the long boil and helps the pudding hold its shape. A loose cloth lets water soak in and makes the pudding heavy and soggy.

Swap the currant

How well each one fits the dish's main ingredients (flour, bread, beef, raisin, apple, sugar, orange):

  1. Figfits better
  2. Cranberryfits better
  3. Vanillafits better
  4. Currantthe original

Fit is the average pairing score against flour, bread, beef, raisin, apple, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
