What each ingredient does

Whole rice
Cooks down into a soft, thick body that gives the pudding its structure.
Milk
Provides the liquid that the rice absorbs and cooks in, becoming creamy.
Eggs
Set when heated, binding the pudding and giving it a firm, sliceable texture.
Sugar
Adds sweetness and helps keep the pudding moist and tender.
Butter
Adds richness and fat, and buttering the mold helps the pudding release cleanly.

The step that matters

Stirring in the eggs while the mixture is hot. Eggs can scramble if they meet very hot rice too quickly, so the mixture should be hot but not boiling when they go in, and stirred constantly to blend smoothly.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (rice, milk, sugar, lemon, almond, egg, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against rice, milk, sugar, lemon, almond, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
