What each ingredient does

Gooseberries
Provide the fruit flavour and the natural pectin and acid that let the jelly set.
Powdered sugar
Sweetens the jelly and, with boiling, helps it reach a firm, set consistency.
Spring water
Helps the gooseberries break down so their juice can be extracted.

The step that matters

Boil the jelly until it sets on a spoon. Setting depends on the sugar, pectin and acid reaching the right concentration through boiling. Stopping too early leaves a runny jelly, while overcooking can make it stiff and dull in flavour.
