What each ingredient does

Gooseberries
Provide the fruit that is cooked, soaked and dried into the preserves.
Sugar
Sweetens the fruit and, in a concentrated syrup, helps preserve it by drawing out water.

The step that matters

Simmering the gooseberries in the syrup. Simmering for only 8 to 12 minutes softens the fruit while keeping its skin intact. Overcooking breaks the berries apart, and the soaking that follows depends on the fruit holding its shape.
