Very Fine Raspberry Vinegar

Ingredients

Directions

Infuse the raspberries

  1. Fill glass jars or large bottles with ripe raspberries, removing their stalks.

  2. Cover the raspberries with vinegar and let them infuse for 7 to 10 days.

  3. Drain the vinegar.

  4. Place the raspberries in a sieve over a bowl to collect the juice.

  5. Replace the raspberries in the jars.

  6. Pour the vinegar back over the raspberries.

  7. After 2 to 3 days, drain the vinegar again.

Make the syrup

  1. Strain the vinegar through a jelly bag or cloth.

  2. Boil the strained vinegar gently for 4 to 5 minutes with an equal weight of sugar, skimming off any scum.

  3. Bottle the syrup the next day.

What each ingredient does

Raspberries
Provide the main flavour and colour, and their juice gives the vinegar its fruit character.
White wine vinegar
Extracts the raspberry flavour during infusion and gives the syrup its sharp acidity.
Sugar
Sweetens the vinegar and, when boiled, thickens it into a syrup that keeps well.

The step that matters

Boil the strained vinegar gently with the sugar. Boiling gently dissolves the sugar fully and skimming removes scum that could spoil the syrup. Boiling hard can darken the colour and dull the fresh raspberry flavour.
