  1. Dip the veal slices in the beaten egg yolks.

  2. Strew bread crumbs, sweet herbs, lemon peel, and nutmeg over the veal.

  3. Fry the veal in a pan with fresh butter until cooked.

  4. While frying, prepare a little gravy.

  5. Once the meat is done, remove it and place it in a dish before the fire.

  6. Shake a little flour into the pan and stir it around.

  7. Add the gravy and lemon juice, stirring well.

  8. Pour the sauce over the cutlets and garnish with sliced lemon.
