To Dress Collops Quick

Ingredients

Directions

  1. Cut the veal into thin slices, as thin as paper.

  2. In a small pot, combine any skin and odd bits of veal with water, pepper, and salt; bring to a simmer.

  3. Dip the veal slices in the beaten egg, then coat with a mixture of herbs, bread crumbs, pepper, salt, and nutmeg.

  4. Heat butter in a frying pan and fry the collops quickly for about 2 minutes on each side.

  5. Transfer the collops to a hot dish and keep warm.

  6. Strain the cooking liquid, thicken it, and bring to a boil in the frying pan.

  7. Pour the gravy over the collops and add a little ketchup if desired.

  8. Alternatively, fry the collops in butter seasoned with salt and pepper, then simmer in gravy with bacon bits.
