Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender as it simmers in the gravy.
Onions
Soften and turn sweet when fried, adding body to the sauce.
Butter
Carries the curry flavour and adds richness when fried and mixed into the roux.
Curry powder
Supplies the spice and aroma that define the dish.
Flour
Thickens the sauce when cooked with the butter and curry powder.
Cream
Adds richness and a smoother, creamier texture to the sauce.

The step that matters

Mixing the curry paste into the stew. Flour mixed with butter and curry powder must be blended until smooth before it goes in, or it will form lumps instead of thickening the sauce evenly.

Swap the clove

How well each one fits the dish's main ingredients (chicken, onion, butter, garlic, flour, cream, lemon):

  1. Thymefits better
  2. Parsleyfits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against chicken, onion, butter, garlic, flour, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
