Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of beef
Provides the meat and bones that build the rich, savory body of the broth.
Sweet onions
Release sugars and savory flavor as they stew, adding depth and sweetness to the broth.
Soy sauce
Adds salty, savory depth and helps deepen the broth's color.
Mushroom ketchup
Adds concentrated umami and savory depth to the broth.
French roll
Soaks up the broth, becoming soft and savory when moistened in the soup.

The step that matters

Remove the fat the next day. Fat that has cooled and solidified on the surface is easy to lift off in one layer. Skipping this leaves a greasy soup, so chill it overnight before skimming.

Swap the mace

How well each one fits the dish's main ingredients (beef, onion, clove, allspice, carrot, turnip, celery):

  1. Thymefits better
  2. Winter savoryfits better
  3. Marjoramfits better
