What each ingredient does

Mutton neck
Provides the main meat, and its fat browns to build flavour before stewing.
Curry powder
Supplies the spice flavour that defines the dish.
Onions
Add sweetness and body to the stew as they soften and melt into the sauce.

The step that matters

Adding the curry powder. Curry powder added too early or boiled hard can turn bitter and dull its aroma. Adding it near the end and simmering gently keeps the spices fragrant and balanced.

Swap the onion

How well each one fits the dish's main ingredients (mutton, pepper):

  1. Capsicumfits better
  2. Carrotfits better
  3. Tomatofits better
  4. Onionthe original

Fit is the average pairing score against mutton, pepper. Candidates are from the same food group and used in at least 100 recipes.
