Why it works: Cauliflower and radish share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 55 recipes. Both carry 2-methoxy-4-vinylphenol, which smells clove, smoky. The science ↓

  1. Soak the ginger in water overnight.

  2. Scrape and slice the ginger, then layer it in a pan with coarse sea salt until ready to use.

  3. Peel, slice, and salt the garlic for three days, then dry it in the sun.

  4. Salt and dry the long pepper in the same manner.

  5. Quarter the small white cabbages, salt for three days, then squeeze and dry them in the sun.

  6. Cut the cauliflowers into branches, remove the greens from the radishes, and cut the celery into three-inch lengths.
