Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the cream into a firm, sliceable structure as it cools.
Fine cream
Supplies fat for a rich, smooth texture and mouthfeel in the finished set cream.
Milk
Forms the liquid base that carries the vanilla flavor and combines with the cream.
Fine sugar
Adds sweetness and balances the flavor of the vanilla and dairy.

The step that matters

Stir the mixture until nearly cold before pouring it into the mold. If the mixture is still very warm, the set will be slow and weak, and if it cools too much it may thicken unevenly. Gentle stirring during cooling keeps the mixture smooth and evenly distributed so the isinglass sets uniformly.
