Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Malaga raisins
Supply the sugars and flavour that the wine is built from.
Cider
Provides the liquid that soaks the raisins and starts fermentation.
Brandy
Fortifies the wine, raising its alcohol content and stopping further fermentation.

The step that matters

Rack into a full cask. The new cask should be filled completely so little air touches the wine. Air exposure lets oxidation and spoilage organisms affect flavour during long storage.

Swap the raisin

How well each one fits the dish's main ingredients (cider, brandy):

  1. Applefits better
  2. Currantfits better
  3. Apricotfits better
  4. Raisinthe original

Fit is the average pairing score against cider, brandy. Candidates are from the same food group and used in at least 100 recipes.
