Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Raised Pork Pie

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Remove the rind and bone from the pork loin.

  2. Cut the pork into chops and flatten them.

  3. Season the chops with sage, black pepper, and salt.

  4. Pack the seasoned pork closely into a raised crust.

  5. Cover with a top crust and pinch the edges to seal.

  6. Brush the crust with egg yolk.

  7. Bake in a slow oven at 300°F (150°C) for two hours.

  8. Remove the lid, pour off the fat, and add seasoned gravy.
