Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oatmeal or groats
Thickens the liquid as its starch gelatinises, giving the gruel body.
Butter
Adds fat for a richer mouthfeel and rounder flavour.
Pearl barley
Releases starch when boiled, thickening the liquid in the barley version.

The step that matters

Stirring while boiling the oatmeal. Oatmeal can settle and scorch on the bottom of the pan while it boils. Constant stirring keeps particles suspended and heats the starch evenly, so it thickens smoothly instead of clumping or sticking.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (butter, sugar, barley):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Thymefits less well
  4. Capersfits less well

Fit is the average pairing score against butter, sugar, barley. Candidates are from the same food group and used in at least 100 recipes.
