What each ingredient does

Chicken
Provides the main protein, which breaks down into a paste that forms the body of the filling.
Chicken broth
Adds moisture so the beaten meat loosens into a spreadable mixture.
Grated lemon peel
Adds aromatic oils that brighten the flavour of the chicken.
Grated nutmeg
Adds warm, aromatic spice that complements the chicken.

The step that matters

Simmer until it thickens. Simmering evaporates water and lets the cooked meat proteins and starch-free paste set into a thick, spreadable mass. Stopping too early leaves it loose, while overcooking can make it dry and stiff.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, lemon):

  1. Thymefits better
  2. Marjoramfits better
  3. Rosemaryfits better
  4. Nutmegthe original

Fit is the average pairing score against chicken, lemon. Candidates are from the same food group and used in at least 100 recipes.
