Home-brewing
Ingredients
Directions
Fill a pail with water until clear, then return the thick wort lightly to the mash-tub.
Sprinkle water over the mash using a watering can.
Gauge the wort in the underback and decide the amount of ale to brew, allowing one-third for losses.
Turn the tap of the mash-tub to run the wort into the underback.
Fill the copper with water and boil it, then cool to 196°F (91°C).
Run the cooled water over the grains for table-beer.
Once drawn off, put the ale-wort into the copper for boiling.
Add half of the hops to the wort and boil for 30 minutes.
Add the remaining hops and boil for another 30 minutes.
Damp the fire and run the wort into a cooler through a coarse sieve to strain out the hops.
Pour the table-beer wort into the copper with the hops and boil rapidly for 1.5 hours.
Run the cooled wort into a cooler.
