Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Their thinly pared peel supplies the main citrus aroma and flavour.
Spirit of wine or brandy
Acts as the solvent that draws flavour and aroma out of the peel.
Bitter almonds
Add a subtle nutty, bitter note that rounds out the flavour.
Loaf sugar
Sweetens the liqueur and balances the alcohol and citrus acidity.

The step that matters

Shred the peel very thinly. Only the outer zest carries oil and aroma; thick pith adds bitterness and dulls the flavour. Thin paring gives more surface area for the spirit to extract oils quickly and cleanly.
