Baked Plum Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix the flour, breadcrumbs, suet, brown sugar, raisins, currants, baking powder, and mixed spice.

  3. In another bowl, whisk together the milk and eggs.

  4. Combine the wet and dry ingredients until well mixed.

  5. Pour the mixture into a greased pudding mold.

  6. Cover with a lid or parchment paper and bake for 1.5 to 2 hours.

  7. Let cool slightly before serving.
