Ingredients

Directions

Prepare

  1. Cut the beef into thin slices based on the quantity needed.

  2. Slice the onions thinly and coat both the beef and onions with flour.

Brown

  1. Fry the beef and onions until they are a light pale-brown, avoiding any blackening.

Simmer

  1. Transfer the browned mixture to a stew pan.

  2. Pour boiling water over it and bring to a boil.

  3. Pour the mixture over the meat.

  4. Add parsley, thyme, savory, knotted marjoram, tarragon, mace, allspice berries, black peppercorns, cloves, and a small piece of ham or bacon.

  5. Simmer until all the juices from the meat are extracted, skimming frequently.

What each ingredient does

Beef
Provides the meat and juices that are extracted to flavour the gravy.
Onions
Add sweetness and savoury depth as they brown with the beef.
Flour
Coats the beef and onions, helping the browned pieces thicken the liquid.

The step that matters

Fry until light pale-brown only. Browning builds flavour, but blackening makes the gravy bitter. Stopping at light pale-brown keeps the taste rich without harshness.

Swap the mace

How well each one fits the dish's main ingredients (beef, onion, flour, parsley, thyme, marjoram, tarragon):

  1. Winter savoryfits better
  2. Sagefits better
