Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the yolks of the hard-boiled eggs in half and place some in the bottom of a pot.

  2. Add chopped parsley, pepper, and coarse sea salt until the pot is full.

  3. Pour in enough water to cover the ingredients and add 1 ounce of butter on top.

  4. Cover the pot with double paper and bake at 350°F (175°C) for about 1 hour.

  5. Press the mixture together with a spoon and let it cool.

  6. Transfer to a small mold for a beautiful presentation as a supper or side dish.
