Curry of Rabbit

Ingredients

Directions

Prepare the sauce

  1. Fry the pieces of rabbit in the same fat for about 10 minutes, turning to fry evenly.

  2. Drain the rabbit pieces.

  3. In a stew-pan, combine fried onions, chopped sour apple (or gooseberries), and stock.

  4. In a bowl, mix curry paste, curry powder, salt, and ground rice with a little stock to form a smooth paste.

  5. Stir the paste into the sauce and simmer until the onions are soft.

  6. Rub the mixture through a fine sieve back into the stew-pan.

Cook and serve

  1. Add the rabbit pieces and simmer gently for 2 hours.

  2. Stir in the cream at the end of cooking.

  3. Taste and add lemon juice if more acidity is needed.

  4. Serve with boiled rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rabbit
Provides the meat that becomes tender during the long, gentle simmer.
Sour apple or gooseberries
Adds acidity and fruity tartness that balances the rich, spiced sauce.
Ground rice
Thickens the sauce so it becomes smooth and body-rich when sieved.
Curry paste and curry powder
Supply the main spiced flavour of the curry.
Cream
Adds fat and richness, softening the sharpness and spice of the sauce.

The step that matters

Rubbing the sauce through a fine sieve. Pressing the cooked onion, apple and thickener through the sieve breaks down solids into a smooth, even sauce. Skipping or rushing this leaves a lumpy texture and uneven thickening.

Swap the apple

How well each one fits the dish's main ingredients (rabbit, onion, rice, cream, lemon):
