Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release gelatin and flavor into the water during long, gentle simmering, giving body to the stock.
Carrots
Add natural sweetness and aromatic depth to the stock's flavor.
Onion
Contributes savory sweetness and aroma as it cooks in the liquid.
Turnips
Add mild sweetness and earthy flavor to the stock.
Liebig’s extract of meat
Concentrates meaty savory flavor, boosting the stock's overall taste.

The step that matters

Skimming the surface. Skimming removes coagulated proteins and fat that rise as the liquid heats. Removing them keeps the stock clear and prevents a cloudy, greasy result.
