Boiled Fish

Ingredients

Directions

Prepare the fish

  1. Scrape off the scales of the fish without injuring the skin.

  2. Wipe the inside of the fish with a cloth dipped in vinegar.

  3. Dry the fish and place it on a drainer.

Boil and serve

  1. Bring a large pot of salted water to a boil and add ½ cup of vinegar.

  2. Gently boil the fish for about 30 minutes, skimming the water occasionally, until the eyes start to bulge and the flesh separates from the bone.

  3. Keep the fish hot on the drainer if not serving immediately, but do not leave it in the water.

What each ingredient does

Vinegar
Adds acidity to the cooking water and the fish's inside, sharpening flavour and helping cut through richness.

The step that matters

Gently boil the fish for about 30 minutes. A hard, rolling boil breaks up the delicate flesh and can tear the skin, while gentle simmering cooks the fish evenly so it flakes cleanly from the bone. Skimming keeps the broth clear.
