Asparagus

Ingredients

Directions

Prepare the asparagus

  1. Scrape the asparagus stalks until they look white and cut them evenly.

  2. Tie the asparagus in small bundles and place them in boiling salted water.

  3. Boil the asparagus until slightly tender, about 5-7 minutes, then remove from water.

Toast and serve

  1. Toast a slice of bread, about ½ inch thick, on both sides until brown.

  2. Dip the toasted bread in the asparagus cooking liquid and place it on a serving dish.

  3. Pour a little butter over the toast and arrange the asparagus around it with the white tops facing outward.

  4. Serve additional butter on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Asparagus
Forms the main vegetable, its tender stalks cooking to a soft, edible texture.
Bread
Forms the base that soaks up the asparagus cooking liquid and butter.
Butter
Adds richness and fat, giving the toast and asparagus a rounded flavour.

The step that matters

Boil the asparagus until slightly tender. Asparagus turns dull, olive-green and mushy when overcooked, since prolonged heat breaks down its cell walls. Removing it as soon as it is just tender keeps its colour, bite and flavour.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter):

  1. Leekfits about as well
  2. Potatofits about as well
  3. Tomatofits about as well
  4. Asparagusthe original

Fit is the average pairing score against bread, butter. Candidates are from the same food group and used in at least 100 recipes.
