What each ingredient does

Rump steaks or tender beef
Provides the meat that stays tender when fried quickly and then stewed.
Flour
Coats the beef and, with butter, thickens the gravy into a smooth sauce.
Butter
Adds richness and carries flavour when melted and fried with the beef.
Gravy
Forms the liquid base that the beef and garnishes simmer in.
Pickled cucumbers
Adds sharp acidity that cuts through the richness of the beef and gravy.
Onion
Adds savoury aroma and sweetness as it softens in the sauce.

The step that matters

Frying the beef quickly. Searing the floured beef briefly over medium heat browns its surface and seals in juices. Overcooking it before the stew stage leaves the meat dry and tough.
