Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the meaty flavor that builds the body of the gravy as it simmers.
All-purpose flour
Coats the beef and browns in the butter, then thickens the liquid as it cooks.
Butter
Carries the browning of the beef and adds richness to the gravy.
Toasted bread crust
Adds toasty, browned aroma and color to the simmering liquid.

The step that matters

Fry the beef until lightly browned on all sides. Browning creates Maillard flavors in the meat and fat that carry into the gravy. Pale, unbrowned beef yields a flatter, less savory broth.

Swap the mace

How well each one fits the dish's main ingredients (beef, flour, butter, clove, carrot, bread):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against beef, flour, butter, clove, carrot, bread. Candidates are from the same food group and used in at least 100 recipes.
