  1. Combine cauliflower, cabbages, carrots, onions, and turnips in a bowl.

  2. Boil a strong brine with coarse sea salt and simmer the vegetables for 2 minutes.

  3. Drain the vegetables and let them dry in a warm place until shriveled.

Make the pickle

  1. In a pot, combine vinegar, mustard flour, long pepper, ginger, horseradish, and shallots, then boil the mixture and pour it over the pickles while hot.

What each ingredient does

Cauliflower
Forms the bulk of the pickle and keeps a firm, crisp bite after brining.
White cabbages
Provides the main body of the pickle and holds its crunch through the brine.
Vinegar
Provides the acidity that preserves the vegetables and gives the pickle its sharp flavour.
Mustard flour
Adds sharp, pungent heat that flavours the vinegar.
Horseradish
Adds pungent, sharp heat that deepens the pickle's flavour.
Ginger
Adds warm, aromatic spice to the pickling liquid.

The step that matters

Drying the vegetables until shriveled. Removing surface water before pouring on hot vinegar helps the pickle stay crisp and keeps the liquid from being diluted, so the vegetables absorb the acidic brine more evenly.
