To Preserve Raspberries Whole
Ingredients
Directions
Prepare
Select sound raspberries, with stalks on or off.
Place them in a preserving pan.
Make the syrup and cook
Boil enough sugar to cover the raspberries until it snaps.
Put the raspberries on a slow fire and gently boil them.
The next day, drain the raspberries from the syrup.
Boil the syrup until it blows.
Reheat and jar
Add the raspberries back to the syrup and heat until scalding hot, but do not boil.
Once cooled, transfer the raspberries to jars.

What each ingredient does
- Raspberries
- Provide the fruit, which softens gently and holds its flavor within the sweet syrup.
- Sugar
- Sweetens the fruit and, as a concentrated syrup, helps preserve it.
The step that matters
Reheat the raspberries without boiling. Boiling breaks down the fruit and makes the berries mushy. Gentle heat to scalding keeps them whole while still warming them through in the syrup.
