What each ingredient does

Damsons
Provide the fruit flavour, natural pectin and acidity that give the preserve its body.
Sugar
Adds sweetness and, as the mixture thickens, helps it set and keeps it preserved.

The step that matters

Boil until the sides of the pan candy. As water evaporates, the sugar concentration rises and the mixture thickens and sets. Stopping too early leaves it runny, while cooking too long can make it stiff and grainy once cooled.
