Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Releases gelatin and body into the liquid as it simmers, giving the stock richness.
Lean ham
Adds savory, smoky flavor to the broth.
Onions
Contribute sweetness and aromatic depth as they cook down in the liquid.
Celery
Adds savory, aromatic background flavor to the stock.
Carrots
Add gentle sweetness and color to the finished broth.

The step that matters

Skimming the scum after the boil. Impurities and proteins that rise to the surface during the initial boil can make the stock cloudy and give it off flavors. Removing them early keeps the finished stock clear and clean-tasting.
