What each ingredient does

Cod fish
Provides the main body of the dish; its lean flesh flakes when cooked through.
Flour
Dry coating that helps the egg adhere and promotes even browning in the pan.
Egg
Binding layer that helps the bread crumbs stick to the fish slices.
Fine bread crumbs
Form a crisp, golden crust when fried.
Melted butter
Adds richness and a rounded, savory flavor to the served fish.
Anchovy sauce
Adds a salty, savory depth that complements the mild fish.

The step that matters

Frying until an even brown on both sides. Cod is lean and dries out quickly, so moderate heat and watching the colour closely keep the flesh moist while the coating browns evenly.
