Ingredients

Directions

The book says “a gentle oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Open and clean the sea bream, keeping the scales on.

  2. Pat the fish dry with a cloth to absorb moisture.

  3. Season the inside of the fish with salt and pepper.

  4. Sprinkle salt on the outside of the fish.

  5. Place butter on top of the fish.

  6. Optionally, fill the fish with veal stuffing for longer baking.

Cook the fish

  1. Broil the fish over a gentle fire for about 30 minutes, turning it halfway through.

  2. If cracks appear, dust them with flour.

  3. Bake the fish in a moderate oven (350°F/175°C) for 25 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, helping the skin brown and the flesh stay moist.
Flour
Dusted onto cracks, it helps seal openings in the skin so less moisture escapes.
Veal stuffing
Fills the cavity of the fish and adds flavour and moisture during the longer baking.

The step that matters

Broil over a gentle fire. Gentle, steady heat cooks the fish through without drying or splitting the skin. Turning it halfway helps both sides cook evenly and brown.
