Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat and gelatin that give the gravy body and a rich mouthfeel.
Ham
Adds savory, salty depth and fat that flavour the stock as it reduces.
Broth
Forms the liquid base that reduces and concentrates into the gravy.
Mushrooms
Add earthy savoriness that deepens the flavour of the finished gravy.

The step that matters

Watch the gravy to prevent burning. As the liquid reduces and sugars and proteins concentrate on the pan bottom, they can scorch quickly. Frequent shaking and close watching keep the glaze forming evenly in amber rather than turning bitter and burnt.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (ham, veal, meat, parsley, mushroom, onion, celery):

  1. Thymefits better
  2. Marjoramfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against ham, veal, meat, parsley, mushroom, onion, celery. Candidates are from the same food group and used in at least 100 recipes.
