What each ingredient does

Mutton kidneys
Form the main body of the gravy and give it its rich, meaty flavor.
Butter
Adds fat for richness and carries flavor as the kidneys cook.
Onion
Adds savory sweetness and aroma as it softens in the butter.

The step that matters

Cook over medium heat, shaking well, until most moisture evaporates. Evaporating surface moisture lets the kidneys brown slightly and concentrates flavor. Too much liquid left in the pan before adding water leads to a dull, steamed taste and a thinner final gravy.

Swap the onion
