Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the roux and gives the sauce a rich, smooth flavour.
Flour
Thickens the gravy as it cooks with the butter and liquid.
Strong pale gravy
Provides the main liquid and savoury base of the sauce.
Mushrooms
Add earthy flavour and body to the finished sauce.

The step that matters

Cooking the roux until it loses the raw flour taste. Flour that is not cooked enough tastes pasty and raw. Stirring constantly over gentle heat cooks the starch evenly and prevents scorching or lumps, which keeps the sauce smooth and pale.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, mushroom):

  1. Shallotfits better
  2. Chivefits better
  3. Leekfits better
