Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Button mushrooms
Provide the main body and earthy flavour of the sauce.
Béchamel or white sauce
Forms the creamy base that carries the mushrooms.
Flour
Thickens the sauce through starch gelatinisation as it cooks.
Butter
Adds richness and a smooth, rounded mouthfeel.

The step that matters

Simmer until the mushrooms are tender. Mushrooms hold a lot of water and can stay rubbery if undercooked. Simmering gently softens their cell walls and releases flavour into the sauce, while a hard boil can make the sauce break or scorch on the base of the pan.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, sauce, flour, butter):

  1. Capersfits better
  2. Jalapenofits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against mushroom, sauce, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
