Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet chestnuts
Their starch thickens the sauce and gives it a smooth, body-rich texture once pressed.
Veal gravy
Provides the savoury meat base that carries the flavour of the whole sauce.
Rich cream
Adds fat for a silky mouthfeel and rounds out the sharpness of the seasonings.

The step that matters

Press the mixture through a fine sieve. Pressing forces the cooked chestnut pulp through the sieve, breaking it into fine particles and removing fibrous skins and lumps. Skipping or rushing this leaves a grainy sauce rather than a smooth one.

Swap the mace

How well each one fits the dish's main ingredients (chestnut, veal, lemon, pepper, cream):

  1. Sagefits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against chestnut, veal, lemon, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
