What each ingredient does

Raisins
Add sweetness and a soft, chewy body that thickens the fruit mixture.
Crabs or hard acid fruit
Provides tartness and bulk that balances the sugar and spices.
Brown sugar
Adds sweetness and depth, and helps preserve the sauce.
Vinegar
Adds acidity and sharpness and loosens the mixture to a thick cream.
Cayenne pepper
Adds heat that gives the sauce its sharp, pungent bite.
Garlic
Adds pungent aroma and savoury flavour to the finished sauce.

The step that matters

Gradually add vinegar. Adding vinegar too quickly can make the sauce thin or uneven. Adding it slowly lets you stop at a thick cream consistency, and the acid also helps preserve the sauce.

Swap the raisin
