Why it works: Cucumber and onion match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cucumber Vinegar

Ingredients

Directions

Prepare

  1. Wipe the cucumbers and slice them into a stone jar without peeling.

  2. Pour boiling vinegar over the cucumbers until they are fully covered.

  3. Add 1 teaspoon of salt and ⅔ teaspoon of peppercorns for every pint and a half of vinegar.

  4. Optionally, add a mild onion for extra flavor.

Steep and bottle

  1. Let the mixture sit for one to two months, ensuring it is well sealed from air.

  2. Strain the mixture, allow it to settle, and pour the clear liquid into small dry bottles.

  3. Cork the bottles tightly.

What each ingredient does

Young cucumbers
Provide the main flavor that infuses into the vinegar as it steeps.
Boiling vinegar
Acts as the preserving liquid that extracts flavor from the cucumbers over time.
Salt
Seasons the vinegar and adds savory depth to the finished liquid.

The step that matters

Sealing the jar during the long steep. The mixture must be kept well sealed from air during the one to two months of steeping. Air exposure invites spoilage and off-flavors, so an airtight jar protects the infusion until it is strained and bottled.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, vinegar):

  1. Radishfits better
  2. Mustardfits better
  3. Cauliflowerfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, vinegar. Candidates are from the same food group and used in at least 100 recipes.
