Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavour and form the powder that gives the sauce its earthy taste.
Strong veal gravy
Supplies the savoury body and liquid base of the sauce.
Cream
Adds richness and a smooth, silky texture to the sauce.
Flour
Thickens the sauce by absorbing liquid and swelling when heated.

The step that matters

Cork and seal the bottles without delay. Mushroom powder is hygroscopic and absorbs moisture from the air, which can cause clumping, loss of flavour and spoilage. Sealing it immediately keeps it dry and stable.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, veal, cream, flour):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, veal, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
