  1. Mince the white part of a cold roast fillet or loin of veal.

  2. Sprinkle salt, cayenne, and mace over the veal before adding to the sauce.

Make the stew

  1. Heat the veal in a saucepan with the white sauce without boiling.

  2. Add the oysters and their strained liquor just before serving.

Serve

  1. Garnish with fried bread sippets or brioche fleurons.

  2. If using mushrooms, stew them in butter for 10 to 12 minutes and mix with the veal instead of oysters.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meaty body of the stew, held together in the sauce.
White sauce (béchamel)
Forms the creamy, thick base that carries the veal and oysters.
Oysters
Add a briny, savoury flavour and tender texture when added at the end.

The step that matters

Add the oysters and their liquor just before serving. Oysters overcook quickly and turn rubbery when simmered or boiled, so they should be added at the last moment with the heat kept low.

Swap the mace

How well each one fits the dish's main ingredients (veal, sauce, oyster, pepper, bread, mushroom, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against veal, sauce, oyster, pepper, bread, mushroom, butter. Candidates are from the same food group and used in at least 100 recipes.
