Ingredients

Directions

Layer the stew

  1. In a large saucepan, layer a portion of the sliced potatoes.

  2. Season the mutton cutlets with pepper and place some on the potatoes.

  3. Continue layering with the remaining potatoes and mutton, reserving some potatoes for the top.

Simmer and serve

  1. Pour in the cold water and add the salt once the stew begins to boil.

  2. Let it simmer gently for 2 hours and serve hot.

  3. If desired, sprinkle minced onion over the potatoes before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton cutlets
Provide the main meat, whose fat and juices flavour the stew as it cooks slowly.
Potatoes
Supply the bulk of the stew and thicken the liquid as their starch softens during cooking.
Cold water
Forms the cooking liquid that gently braises the layers and keeps them moist.

The step that matters

Simmer gently, do not boil hard. A vigorous boil toughens meat proteins and breaks the potato slices apart. A gentle simmer cooks the mutton slowly and keeps the layers intact and tender over the 2 hours.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
