Ingredients

Directions

Prepare the bird

  1. Fill the bird's legs and wings with forcemeat and other ingredients for a marbled appearance.

  2. Alternatively, draw the legs and wings inside the body, flatten the bird, and cover with sausage meat and other ingredients.

  3. Sew up and truss the bird as usual.

  4. Roll tightly and bind with a broad tape, then wrap in a thin pudding cloth and tie at both ends.

Stew and set

  1. Place in a braising pan or thick iron saucepan, add chicken bones, sweet herbs, carrots, bay leaves, mace, peppercorns, and veal trimmings.

  2. Cover with veal broth and add salt if needed.

  3. Stew gently for 1 hour and 15 minutes to 1 hour and 30 minutes.

  4. Let the bird cool in the cooking liquid.

  5. Boil down the gravy to a jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Forcemeat
Forms a moist, firm stuffing that gives the sliced bird its marbled look.
Chicken bones
Release gelatin into the liquid, helping the reduced gravy set to a jelly.
Veal broth
Provides the savoury liquid that gently cooks the bird and becomes the gravy.
Bacon
Adds fat and savoury flavour that keeps the lean bird moist.

The step that matters

Stew gently for 1 hour and 15 minutes to 1 hour and 30 minutes.. Gentle heat at a low simmer cooks the bird through and keeps the meat tender. A hard boil toughens muscle fibres and can break up the forcemeat.

Swap the mace

How well each one fits the dish's main ingredients (liver, carrot, chicken, veal):

  1. Celeryfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against liver, carrot, chicken, veal. Candidates are from the same food group and used in at least 100 recipes.
