What each ingredient does

Fowl or young chickens
Provides the main meat, which becomes tender through slow simmering in water.
Water
Gently cooks the bird by moist heat, keeping the meat tender and moist.

The step that matters

Cover the fowl with hot water, not boiling. Starting with water that is hot but below a boil heats the bird gradually. Boiling water toughens the meat and makes the skin break apart, so a gentle simmer keeps the flesh tender and the appearance clean.

Swap the cauliflower

The recipe marks cauliflower as optional. How well each one fits the dish's main ingredients (chicken, parsley):

  1. Carrotfits better
  2. Potatofits better
  3. Shallotfits better
  4. Cauliflowerthe original

Fit is the average pairing score against chicken, parsley. Candidates are from the same food group and used in at least 100 recipes.
