Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. Trim excess fat from the mutton cutlets and wash them. Dredge the cutlets lightly with flour. Season the cutlets with salt, pepper, and cayenne.

  3. Place the cutlets in a tin mold. Add enough broth or water to create gravy. Stir in the mushroom catsup or Harvey's sauce.

Top and bake

  1. Boil the potatoes. Mash the boiled potatoes with butter and milk or cream until smooth.

  2. Spread the mashed potatoes over the cutlets, leaving the surface a bit rough. Cover the mold.

  3. Bake for 45 to 75 minutes, depending on size. Do not lift the cover until serving.

Serve

  1. Serve with a folded napkin around the mold.

What each ingredient does

Mutton cutlets
Provide the meat that cooks slowly in the covered mold, becoming tender in the gravy.
Potatoes
Form a mashed crust that seals in steam and browns lightly on the surface.
Butter
Adds richness and fat to the mashed potato topping, improving its flavor and smoothness.
Milk or cream
Adds moisture to the mashed potatoes so they become smooth and spreadable.
Flour
Lightly coats the cutlets, helping the surface brown and slightly thickening the gravy.
Mushroom catsup or harvey's sauce
Adds savory, umami depth to the gravy around the meat.

The step that matters

Keep the cover on during baking. Lifting the cover releases the steam that cooks the meat and keeps the gravy moist, so the cutlets can dry out or cook unevenly.

Swap the potato
