Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil down the rhubarb with 7 ounces of sugar until cold.

  2. Pour ½ pint of cold rich boiled custard over the rhubarb.

  3. Heap well-drained, slightly sweetened whipped cream on top.

  4. Fill a deep tart dish with stewed pears, covering them with their juice.

  5. Whisk 5 egg whites to a solid froth, then stir in 5 tablespoons of dry sifted sugar.

  6. Spread the meringue evenly over the fruit.

  7. Bake in a moderate oven at 350°F (175°C) for 30 minutes.
