What each ingredient does

Gooseberries
Provide the fruit, natural pectin and tartness that help the jam set and taste bright.
Sugar
Adds sweetness, helps the jam set and acts as a preservative.

The step that matters

Boiling with the sugar. Once the sugar is added, the mixture must boil quickly and be stirred so it does not scorch on the bottom. A rapid boil concentrates the sugar and pectin so the jam sets properly.
