What each ingredient does
- Gooseberries
- Provide the pectin and acidity that give the jam its body and tart flavour.
- Gooseberry juice
- Adds extra liquid and pectin-rich juice to extract and carry flavour through the cooking.
- Sugar
- Sweetens the jam and helps it thicken and keep by binding water.
The step that matters
Boiling the preserve after adding sugar. Sugar must dissolve fully before boiling so it does not crystallise. The jam then needs enough boiling to reach setting point, since pectin and sugar only gel at the right concentration and temperature.
