Strawberry- Jelly
Ingredients
Directions
Gather strawberries on a dry day after the morning dew has passed.
Remove the stalks and place strawberries in an enamelled saucepan over high heat.
Gently stir with a wooden or silver spoon until the juice flows abundantly.
Simmer for about 30 minutes, ensuring not to over-boil until thick or pulpy.
Strain the juice through a clean sieve into a pan and let it drip until no more juice comes out.
Weigh the juice and boil it quickly in a clean preserving pan for 15 to 20 minutes, stirring often.
